做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热(rè )锅,用姜块在锅(guō )上擦一(yī )遍,放两勺油(yóu ),待油六成热下鱼(yú ),煎至微黄。煮沸瓦煲里的(de )清水,放(fàng )入(rù )煎(jiān )煮好的鲫鱼(yú )和其(qí )他材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调味即可品尝。
