做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒1分(fèn )钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
