做法(fǎ ):春(chūn )笋切成片(piàn )后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均(jun1 )匀(yún ),加入少量清(qīng )水(shuǐ )半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
