做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
