做法:洗净(jìng )宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用姜块在锅上(shàng )擦一遍(biàn ),放(fàng )两勺油,待(dài )油六成热(rè )下(xià )鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放(fàng )入煎煮好的(de )鲫鱼和(hé )其他材料,武火煮沸,转中小火煲一个半小时(shí ),下盐调味即可品尝。
