做(zuò )法(fǎ ):春笋(sǔn )切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时(shí )候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
