做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍(pāi )裂一小块姜,热锅,用(yòng )姜(jiāng )块(kuài )在(zài )锅上擦一遍(biàn ),放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼(yú )和其(qí )他材料,武火煮(zhǔ )沸(fèi ),转中小火煲一个半小时(shí ),下盐调味即可品尝。
