做法:春笋切(qiē )成(chéng )片后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
