做法:春笋切成(chéng )片后(hòu )加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再(zài )加(jiā )入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬(áo )干(gàn )的(de )时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖(mèn )。
