做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时候(hòu )加入(rù )盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖(gài )焖。
