做法:春笋切成(chéng )片后(hòu )加少(shǎo )许盐捞出(chū )后用清(qīng )水浸泡(pào ),生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水(shuǐ )半(bàn )掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
