做法(fǎ ):洗净宰好(hǎo )鲫鱼,洗净淮(huái )山和薏(yì )米(mǐ )。用清水(shuǐ )把(bǎ )陈皮(pí )泡软,拍(pāi )裂一小块姜,热锅,用(yòng )姜块在锅上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调味即可品尝。
