做法(fǎ ):春笋切成片(piàn )后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住(zhù )春笋(sǔn ),盖上(shàng )锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干的(de )时候加入(rù )盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。
