做法:春笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱(cōng )切(qiē )成(chéng )段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
