做法:春笋切成片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜切片(piàn ),葱(cōng )切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
