做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮山和(hé )薏米(mǐ )。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜块在(zài )锅上(shàng )擦一遍,放两勺油,待油六(liù )成热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的(de )鲫鱼和其(qí )他(tā )材料,武火煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐调味即可品尝(cháng )。
