做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩住春(chūn )笋,盖上锅盖大(dà )火(huǒ )煮开后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬干的时候(hòu )加入盐(yán ),翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
