做法(fǎ ):洗净(jìng )宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武火煮沸(fèi ),转中小火煲一(yī )个(gè )半小时,下盐(yán )调味即可品尝。
