做法:春(chūn )笋(sǔn )切成片后加少许盐捞出后(hòu )用清水浸(jìn )泡,生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻(fān )炒均匀稍(shāo )收(shōu )汁时盖上锅盖(gài )焖。
