做法:春(chūn )笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段(duàn )。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半(bàn )掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
