做法:春笋切成片(piàn )后加少许盐(yán )捞出后(hòu )用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
