做法:洗净(jìng )宰好鲫鱼,洗净淮(huái )山(shān )和薏米。用(yòng )清(qīng )水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼(yú )和其他(tā )材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐(yán )调味即可品(pǐn )尝。
