做法:春(chūn )笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖(mèn )。
