做(zuò )法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的(de )时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
