做法:春笋切成片后加少许盐捞出后(hòu )用(yòng )清水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清(qīng )水半掩(yǎn )住春(chūn )笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
