做法(fǎ ):洗净(jìng )宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清(qīng )水把陈皮泡软(ruǎn ),拍(pāi )裂(liè )一小块姜,热锅,用(yòng )姜块在锅上擦(cā )一遍,放两勺油,待油六成热下(xià )鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转(zhuǎn )中小(xiǎo )火煲一个半小时,下盐调味即可品尝。
