做(zuò )法:洗(xǐ )净宰好(hǎo )鲫(jì )鱼,洗(xǐ )净(jìng )淮山和(hé )薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热(rè )锅(guō ),用姜块在锅上擦一遍,放两勺油,待(dài )油六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中小火煲一(yī )个半小时,下盐调味即可(kě )品尝。
