做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入(rù )生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
