做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂一(yī )小块姜,热锅,用姜(jiāng )块(kuài )在锅(guō )上(shàng )擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至微(wēi )黄(huáng )。煮沸(fèi )瓦煲里的清水,放入煎煮(zhǔ )好的鲫(jì )鱼和其他材料,武火煮沸,转中小火煲(bāo )一(yī )个半(bàn )小时,下盐调(diào )味即可品尝。
