做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的(de )时候(hòu )加入盐,翻(fān )炒均匀稍收汁时(shí )盖上(shàng )锅盖焖(mèn )。
