做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻(fān )炒均匀(yún )稍收(shōu )汁时盖上(shàng )锅盖焖。
