做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山和(hé )薏(yì )米(mǐ )。用(yòng )清(qīng )水把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上擦一遍(biàn ),放两勺油,待(dài )油(yóu )六成热下(xià )鱼(yú ),煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲(bāo )一个半小时(shí ),下盐调味即可品尝。 -
