做法:春笋切成(chéng )片后加少许(xǔ )盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中火。煮到(dào )水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
