做(zuò )法(fǎ ):春笋切成片后加少许盐捞出(chū )后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段(duàn )。锅(guō )烧热(rè ),倒入(rù )2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
