做法:春笋切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
