做法:洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待(dài )油六成热下(xià )鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫(jì )鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐(yán )调(diào )味即(jí )可品尝(cháng )。
