做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干(gàn )的(de )时候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖(gài )焖。
