做法:洗净宰(zǎi )好鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软,拍(pāi )裂一(yī )小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里(lǐ )的清(qīng )水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他(tā )材料,武火煮沸,转中小火煲一个(gè )半(bàn )小时,下(xià )盐调味即可品尝。
