做法:春笋(sǔn )切成片后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜切(qiē )片(piàn ),葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
