做法:春笋(sǔn )切(qiē )成片后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩(yǎn )住(zhù )春笋(sǔn ),盖上(shàng )锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均(jun1 )匀稍收(shōu )汁时盖上锅盖焖(mèn )。
