做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂一(yī )小(xiǎo )块姜,热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫(jì )鱼(yú )和其他材(cái )料,武(wǔ )火煮沸,转中(zhōng )小火煲一个半小时,下盐调味即可品尝。
