做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍裂(liè )一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎(jiān )煮好(hǎo )的鲫鱼和其他材料(liào ),武火(huǒ )煮沸,转(zhuǎn )中小火煲一个半小(xiǎo )时,下盐调(diào )味(wèi )即可品尝。
