做(zuò )法:春笋切成(chéng )片后加(jiā )少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
