做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖(gài )焖。
