做法:洗净宰好鲫鱼(yú ),洗净淮山和薏(yì )米。用清水把陈(chén )皮泡软,拍裂一小块姜,热(rè )锅,用姜块(kuài )在锅上擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎(jiān )煮(zhǔ )好(hǎo )的鲫(jì )鱼和(hé )其他材料,武火煮沸,转中(zhōng )小(xiǎo )火煲一个半(bàn )小时,下盐(yán )调味即可品尝。
