做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再(zài )加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐(yán ),翻(fān )炒(chǎo )均匀稍(shāo )收汁时盖上锅盖(gài )焖。
