做法(fǎ ):洗(xǐ )净宰好鲫鱼(yú ),洗净淮(huái )山和薏米(mǐ )。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍(biàn ),放两勺油,待油六成热(rè )下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时(shí ),下盐调味即可品尝。
