做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大火(huǒ )煮开后转中火。煮(zhǔ )到水快熬(áo )干(gàn )的(de )时候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
