做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
