做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡(pào ),生(shēng )姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春(chūn )笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
